Gelatin Vegetable Salad

This is a true WWII homefront recipe: Gelatin Vegetable Salad. This was the Recipe of the Week in the May 1, 1944 issue of Pathfinder magazine (a weekly published by Farm Journal Inc.), making the most of leftover veggies.  As a girl who still can't choke-down lime J-ELLO with shredded carrots, I'm not even going to try this one.

  2. Leftover fruits, ok, I could buy that, but veggies, yuck. Livin' Vintage blog does a yucky Jello mold recipe once a month. You should check hers out.

  3. Yup, I'm from Minnesota and I've seen peas, lima beans, carrots, corn, string beans, etc. in jell-o. Never understood it. Fruit? Yes. Veggies? Why?

  4. I grew up on lime green jello with shredded carrots. All of us kids hated it so our family calls it "Grumble Salad" to this day.
